Recipes For Drum

— Despite popular misconceptions, freshwater drum are delectable table fish. Fillet your catch and remove all dark red meat along the sides. Then try one of these great recipes.

LEMON-PEPPER DRUM 1-1/2 pounds drum fillets Lemon-pepper seasoning 4 tablespoons butter, melted Dillweed for garnish

Season both sides of the fillets with lemon-pepper seasoning. Saute each fillet in melted butter over medium heat, 5 minutes per side, or till the fish flakes easily when fork-tested. Serve piping hot with butter poured over. Garnish with chopped fresh dill. Yields 3 servings.

MOCK CRABMEAT Any number of drum fillets 1 package or bottle crawfish, shrimp & crab boil

Bring to boil enough water to cover the amount of fish you are serving. Season the water with crawfish, shrimp &boil, following the instructions on the bottle. Place the fish in a wire basket and drop it into the seasoned water. Let it cook only long enough so it turns opaque and begins to flake. Remove the pot fromthe fire, and let the fish soak for about 15 minutes to pick up the seasonings. Then take the fish from the water, and set it in a colander to drain. Serve hot, with melted butter or cocktail sauce.
