Easter feasting

Easter, in addition to its spiritual significance, is also a time to celebrate the newness of the season. After a long winter of root vegetables, hearty greens and thick-skinned squash, the first edibles of spring — tiny green peas, baby lettuces, asparagus shoots, spring onions and tender herbs— are beginning to emerge. In a few short weeks fresh strawberries and raspberries will make their debut.
