Dessert recipes that make just two servings are hard to come by, which explains why we often reach for a carton of ice cream for an after-dinner treat. But this dish is easy to tailor to make as many or as few servings as desired.

Any berry or smashable fruit works well -- blackberries, raspberries, even cherries are all delicious alternatives to blueberries.

Cinnamon, vanilla and lemon give this simple mixture of blueberries, whipped cream and graham crackers a complex and satisfying flavor.

Smashed Blueberries and Cream

1 cup fresh blueberries

2 teaspoons vanilla sugar (see note)

1 teaspoon lemon juice

1/2 cup heavy cream

Pinch or dash cinnamon

4 to 6 graham cracker squares

Set aside a few blueberries.

In a medium bowl, mash the remaining berries with the sugar and lemon juice using a potato masher or a wooden spoon.

In a separate bowl, beat the heavy cream and cinnamon to stiff peaks. Gently fold the smashed blueberries into the whipped cream.

Crumble and divide the graham crackers between two dessert dishes. Spoon blueberry-whipped cream over crumbs. Garnish with the reserved whole berries. Serve immediately.

Makes 2 servings.

Note: I like to make vanilla sugar by keeping a split vanilla bean in a small container of granulated sugar. If you don't have any vanilla sugar add a drop of vanilla extract to the berries when mashing.
