WHAT: Garden Lites vegetable souffles

STATS: Vary by flavor. The Pizza Souffle, for example, contains 200 calories and 4 fat, 21 carbohydrate, 3 fiber and 12 protein grams. We found them at Target, 420 S. University Ave., Little Rock. Visit garden-lites.com.

THE SKINNY: When we hear “souffle,” we automatically think chocolate. Not Broccoli, Zucchini and Butternut Squash.

But Garden Lites, which bills itself as “the delicious vegetable company,” aspires to change that with its line of single-serve, frozen, microwavable vegetable souffles in flavors like Roasted Vegetable, Loaded Potato, Pumpkin Spice, Spinach and Cauliflower, and Carrot Raisin.

We had our doubts. Still, we picked out a few to try (go figure - we chose the least “veggie” sounding varieties, like Pizza, Southwestern, Veggie Chili & Cornbread).

To our surprise, the nicely spiced, cheesy Pizza souffle, which contains cauliflower, egg white, onion, low-fat milk and brown rice, crushed tomatoes and mozzarella, was rather pleasant and made a fine, filling desk lunch.

Those wanting something extra might add one of Garden Lites’ new Veggie Muffins (Veggie Blueberry Oat, Zucchini Banana Chocolate Chip, Zucchini Chocolate, Carrot Berry and Golden Corn). Stay tuned. We’ll be reviewing those soon.
