This take on pork satay is a delicious reason to fire up the grill. But if the cool controlled climate of an indoor kitchen is more your style, the dish is just as good cooked under the broiler.
Pair the skewers with a cool, refreshing salad of mango, cucumber and red onion.
The marinade is equally good on chicken or shrimp.
Sticky Pork Skewers
For the marinade:
1 clove garlic, minced
2 teaspoons minced fresh ginger
1/2 fresh hot chile pepper, seeded
1 heaping tablespoon minced cilantro stems (reserve the leaves)
Salt and ground black pepper
2 tablespoons vegetable oil
1 tablespoon honey
1 tablespoon soy sauce
1 1/2 teaspoons fish sauce
1 1/2 teaspoons brown sugar
1 pork tenderloin, thinly sliced
12 bamboo skewers, soaked in water for 30 minutes
Heat broiler or grill on high.
In a small food processor, combine the marinade ingredients and process to a thick paste.
Transfer to a bowl. Add sliced pork and toss to coat. Thread pork onto the skewers. Grill or broil 2 to 3 minutes on each side or until pork is cooked through and turning crispy on the edges.
Makes 4 servings.

Cucumber and Mango Salad
1 cucumber, peeled, seeded and diced
1 ripe mango, peeled and diced
1/2 red onion, finely chopped
1 small head romaine or gem lettuce, torn into bite-size pieces
Small handful mint leaves
Small handful cilantro leaves
2 tablespoons extra-virgin olive oil
Juice of 1 lime
In a medium bowl, combine the cucumber, mango, onion, lettuce and herbs.
In a small bowl, whisk together the olive oil and lime juice. Add cucumber mixture and toss to coat. Season to taste with salt and pepper.
Makes 4 servings.
