Critical violations: Demonstration of knowledge of food safety evident throughout the facility or by appropriate responses and actions. Employee handled bun with bare hands; no bare-hand contact with ready-to-eat foods. In-use utensils must be washed and sanitized every four hours of use. Reach-in prep table is not holding food at 41 degrees or below; food destroyed as needed. Upright refrigerator is not holding at 41 degrees or below; adjusted. Items must be date marked as needed. Potentially hazardous foods open and not used in 24 hours must be date marked.

Noncritical violations: Raw wood must be sealed to make it smooth, easily cleanable, nonabsorbent, non-porous; wood behind the potato slicer and wood on the shelf in the dry storage is not sealed. Cupboards are no longer easily cleanable. Tape on some spice shakers; tape is not an approved food contact surface. Excessive grease buildup on and around the grill, fryer and cupboards. Clean floor and equipment regularly to prevent buildup.

Critical violations: Wash hands any time contamination could have occurred, when changing tasks and as described in the Arkansas Rules and Regulations Pertaining To Food Establishments. Items in saute "freezer" and fry station above 41 degrees. Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperature in accordance with rules and regulations.

Noncritical violations: Knives stored in between prep tables and on hand sink faucet across from salad prep.

Cathy's Corner

Critical violations: Top portion of the prep table is not holding food at 41 degrees or below; check to ensure unit is working properly. Comet product was being used on a food contact surface; product does not have instructions for use in a retail food establishment or for use on food contact surfaces; product is not to be used for food contact equipment or surfaces (bottle removed).

Noncritical violations: Employee not wearing an effective hair restraint. Drop guard inside the small ice machine (back servers station) is rusty and no longer smooth, easily cleanable and in good condition; replace as needed.

Critical violations: Clean and sanitize the interior of the ice machine drop guard where the ice is actually made. Ham is not date marked as needed.

Noncritical violations: No thermometer in the sandwich refrigerator. Wall behind the three-compartment sink is no longer easily cleanable; caulking is no longer in good condition or cleanable. Facility using duct tape to keep the door closed on the cappuccino machine; duct tape is not an approved repair material. Counter top on the one corner is coming unglued and is no longer in good condition and easily cleanable. Formica is coming unglued at the edge of the three-compartment sink.
