Ceramic knives are lightweight, hold their edge longer than steel, will never rust and won't discolor food. These characteristics make them my favorite kitchen knives. But what do you do when the edge dulls? Some manufacturers offer ship and sharpen services (you mail the knives to them, they sharpen them and send them back for a small fee), but this means doing without a favorite knife for weeks. After more than seven years of regular use, my favorite 7-inch ceramic chef's knife had become so dull it was not safe to use. So I was delighted to learn about Kyocera Ceramic Knife Sharpener. The battery-powered sharpener features a diamond grinding stone and is designed for left- or right-handed use.

It took a few tries to get the speed and pressure just right -- a sensor automatically shuts off the grinder if you press too hard -- but within minutes my trusty ceramic blade was as good as new. In addition to refreshing the edge, the sharpener can be used to resurface blades with small nicks and chips. It also works on steel blades.
