A Celebration of Conservation: 100 AGFC Recipes

The Arkansas Game and Fish Commission -- in celebration of its 100th anniversary -- has published a cookbook. A Celebration of Conservation: 100 AGFC Recipes is chock-full of recipes for main dishes, sides, salads, breads, appetizers, soups, stews and desserts -- including a wide variety of recipes featuring venison, elk, duck, goose, crappie, rabbit, wild turkey and other Arkansas catches. Those recipes are in addition to your usual butcher shop and grocery store meats, poultry and fish. The recipes are from Game and Fish employees, their families and friends, and each recipe is accompanied by a color photograph. Many recipes include a tip or suggestion for preparing the dish, and some include the story behind the dish (our favorite part of a community cookbook) and nods to local fishing holes, hunting spots and businesses.

So far we've only tried the recipe for Cream of Green Chile Soup (see Front Burner on this page), but others on our list include Cypress Knees (russet potatoes topped with crumbled bacon, butter, Cavender's Greek Seasoning, cheese, onion and sour cream), Duck Banh-Mi, Paradise Porter Barbecue Sauce, Lake Conway Slab Crappie Cakes and Venison Poppers (seasoned venison steaks wrapped in jalapeno and bacon).
