Shrimp dish fats high, but they're good ones

Spicy shrimp, creamy avocado, juicy tomatoes, marinated artichoke hearts and briny capers combine in this ideal-for-warm-weather entree. If desired, the "boats" can be made in advance and chilled until ready to serve.

Don't let the high fat gram count shy you away from this dish. The bulk of the fat here is "good" monounsaturated fat from the avocado and olive oil.

Chile-Lime Shrimp Avocado Boats

Juice of 1 lime

3 cloves garlic

2 tablespoons coconut aminos, optional (see note)

1 tablespoon hot taco seasoning

1 pound medium shrimp, peeled and deveined

2 ripe avocados

1 small tomato, diced

1/2 cup marinated artichoke hearts, drained and chopped

1/4 cup chopped red onion

2 tablespoons capers, rinsed

2 tablespoons olive oil

Salt and ground black pepper, to taste

Chopped cilantro or flat-leaf parsley

In a large bowl, combine the lime juice, garlic, aminos and taco seasoning and mix well. Add the shrimp and toss to coat; set aside.

Cut each avocado in half. Using a spoon, scoop out flesh; set shells aside. Discard the pit. Cut the flesh into cubes.

In a medium bowl, combine the cubed avocado, tomatoes, artichoke hearts, red onion and capers. Drizzle with olive oil and season with salt and pepper; set aside.

In a medium skillet over medium heat, cook the shrimp along with the marinade, stirring frequently, until shrimp are pink and just cooked through, 3 to 5 minutes.

Combine the cooked shrimp with the avocado mixture. Fill the reserved avocado shells with heaping mounds of the mixture. Garnish with cilantro and serve.

Makes 4 servings.

Note: Look for coconut aminos on the "health food" aisle.
