Pork chops, greens take place of turkey

Clip this recipe for next week when you've had your fill of turkey.

Simply seasoned pork chops are paired with wilted turnip greens flavored with bacon and hot sauce.

Pork Chops With Southern-Style Greens

1 to 2 slices bacon, cut into small pieces

1 small onion, chopped

1/2 bunch turnip greens

1 cup chicken broth

1/2 teaspoon sugar

Hot sauce, to taste

1 tablespoon vegetable oil

2 bone-in pork chops

Coarse salt and cracked black pepper

Cook bacon in a saucepan over medium-high heat until crisp, about 5 minutes. Using a slotted spoon, transfer bacon pieces to paper towels to drain.

Remove all but 1 tablespoon of the bacon fat from the saucepan. Add the onion and cook until soft and golden, about 5 minutes. Stir in greens and broth. Bring to simmer and cook until greens are tender, 10 minutes. Season with sugar and hot sauce. Keep warm.

Heat the vegetable oil in a large cast-iron skillet. Season chops on both sides with salt and pepper. Cook chops until browned and cooked through, about 5 minutes per side. The internal temperature should read 145 degrees on an instant read thermometer. Let rest 3 to 5 minutes. Serve chops with the greens, with bacon crumbled over.
