Honey glaze spices up Cornish game hens

The glaze for this entree is little bit sweet, a little bit tart and a little bit smoky. The recipe calls for Cornish game hens, but you could easily substitute a small chicken.

To thin the honey enough to make it mix easily with the other ingredients, zap it in the microwave first for 15 seconds (you can get the same result by heating it in a pan over medium heat).

To complete the meal, add a seasonal vegetable, such as sauteed zucchini and bell peppers and rice.

Cornish Game Hen With Honey and Paprika

2 Cornish game hens

2 tablespoons honey

1 tablespoon lemon juice

1 1/2 teaspoons smoked paprika, or sweet or mild

Salt and pepper

Heat oven to 350 degrees (or 425 degrees for chicken). Rinse hens and pat dry with paper towels.

Microwave honey for 15 seconds (or heat in a small saucepan) until it becomes an easily pourable liquid. Mix in lemon juice and paprika. Brush games hens thoroughly with this mixture, season with salt and pepper, and place on a rack atop a baking sheet.

Roast 1 hour for hens weighing less than 1 pound, 2 ounces, or 1 1/4 hours for hens weighing more than that, or until the internal temperature reaches 165 degrees. Keep a close watch, and lightly cover them with foil when the birds start to get too brown (it is actually the honey that will be browning). After 45 minutes, baste with more of the honey-paprika mixture.

Let rest 10 minutes before serving.
