The Colori Titanium paring knife from Kuhn Rikon has been my go-to paring knife since it arrived a few weeks ago. The knife has a 4-inch ice-hardened Japanese carbon steel blade and gets its unique color from its titanium coating. The titanium is combined with carbon, nitrogen or oxygen to create the colors. No pigments are used. The knife is pretty to look at, but it's how it feels in my hand that makes me keep going back to it. The handle is comfortable to grip and the knife, though lightweight, is well-balanced and still has a bit of heft.
