Washington County Restaurant Inspections

Information is from state Health Department records. Restaurants are listed in order of inspection date. All reports are from regular food service inspections unless otherwise noted. Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Aug. 11

Flying Burrito

Critical violations: Wash hands any time contamination could have occurred, when changing tasks and as described in the regulations. Hot-held cheese sauces at 125 degrees in hot serve and hot holding; should be held at 135 or above. Walk-in cooler holding items at 45 degrees; cooler temperature controls were turned down. Bottles of chemicals that are repackaged in bottles for use shall receive the common name of the product on the container.

Noncritical violations: Shelving unit holding flour and sugar lack cleanable feature; shelves that are exposed to splashing, spillage or food spoiling shall be non-corrosive.

Cafe Rue Orleans

1150 N. College Ave., Fayetteville

Critical violations: Container of shredded lettuce stored in melted ice water at 61 degrees. Shrimp jambalaya cooked on Aug. 5 and stored in refrigerator for eight days lacks discarding.

Noncritical violations: Both handwashing sinks lack employee hand washing notices posted. Swai fish is labeled catfish on the menu. Mop sink is not installed.

Critical violations: Server did not use the correct handwashing procedure, dish washer did not wash hands between loading the dishwasher and removing clean dishes; require food employees to wash their hands using the procedure delineated in the regulations. Food in walk-in cooler lacks a cover. Hot-held items were not held at 135 degrees or above. Items in walk-in cooler holding all sides at 44 degrees. Sanitation water needs a label indicating what is in the container.

Noncritical violations: Floors in the restaurant and back of house lack cleaning. Lid on trash container is not closed.
