Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Knives were stored in the handwashing sink; handwashing sinks must be maintained at all times so that they are accessible for employee use. Tossed salad was stored on the preparation table instead of cold holding unit before use. Turkey, ham, sliced cheese and other items did not have discard dates.
