When it comes to nonstick cookware, we’re long past the days of peel-prone Teflon coatings. Bialetti’s Titan line features a micro-divoted (more on that later) titanium-reinforced nonstick surface and is oven safe up to 400 degrees. The stainless-steel and aluminum pans are lightweight enough for easy maneuvering, yet have enough heft for durability.

The micro-divots give the pan a rough surface, which seems counter-intuitive for nonstick, but the divots allow for even oil distribution and according to package materials, actually deter sticking. Our skillet-fried potatoes were evenly browned without sticking and using minimal oil. The same for the seared chicken breasts. But the real test was fried eggs, which cooked evenly and slid easily from the pan.

While cutting is not recommended, metal utensils are fine — although they can leave marks, metal will not damage the cooking surface.

Another bonus: The pans are dishwasher safe.
