Serving up Solutions raises money to feed the hungry

Forty-five state legislators volunteered to serve dinner to guests at Serving up Solutions on June 14 at the Albert Pike Masonic Center.

Dinner was created by local chefs Rosalia Monroe, Capi Peck, Mary Beth Ringgold and Sally Mengel. The menu included the appetizers Camembert and fig croustades, and duck confit and wild mushroom phyllo shells; a salad of baby greens with blueberries and goat cheese, and for the main course of lemon and herb-roasted free range chicken, sour cream and chive mashed potatoes and grilled zephyr squash and zucchini. Dessert was Loblolly Creamery salted caramel ice cream with a Trio's pound cake cookie.

The bipartisan fundraising effort by members of the Arkansas Legislative Hunger Caucus raised a record $130,500 for the Arkansas Hunger Relief Alliance. The alliance is a network of more than 400 hunger relief organizations across the state and is dedicated to reducing hunger in Arkansas through programs such as Arkansas Gleaning Project, Arkansas No Kid Hungry Campaign and Cooking Matters.

Serving as event co-chairmen were Daniel Campbell and Becky Barnes Campbell. Presenting sponsor was Nucor Steel.
