IDEA ALLEY: Coleslaw recipe similar to that served at closed North Little Rock eatery

Recipes that appear in Idea Alley have not been tested by the Arkansas Democrat-Gazette.

Martha Sue Davis sent a follow-up email to the recipe for Creamy Cole Slaw Similar to Cock of the Walk that ran Sept. 12.

Davis writes:

"The original recipe calls for the onion to be sliced VERY thin and placed on top of the slaw (or slaw mix) then sprinkle with the sugar, salt and pepper. DO NOT MIX. Then let stand for at least 2 hours and do NOT put on dressing (mayo and white vinegar) until ready to serve. I have made this for so many years that I haven't used the recipe for years. I just know what looks right. The slaw mix I use is the bag that is sold at Walmart. I don't know size but I think there is only one size."

Davis also shares this cornbread recipe.

She notes the recipe is "very different" and "very good sliced and toasted with butter."

Cornbread

2 cups white cornmeal

1 cup sugar

1 cup flour

1 teaspoon salt

1 teaspoon baking soda

3 tablespoon vegetable oil

2 cups buttermilk

Heat oven to 300 degrees. Grease and flour loaf pan. Mix all ingredients together well. Pour into loaf pan and bake for 1 hour.

An unidentified reader shares this recipe for Cajun seasoning for Linda Rupe.

"This recipe is not from Family Circle, but it may be a good starting point [for Rupe]."

Cajun Seasoning

2 teaspoons salt, or to taste

5 teaspoons garlic powder

5 teaspoons onion powder

1 tablespoon dried thyme, crushed

2 teaspoons paprika

1 tablespoon ground black or white pepper

1/2 to 1 teaspoon ground red pepper (cayenne)

Combine all ingredients and mix well. Transfer to an air-tight container, such as an empty spice jar.

Makes about 1/3 cup.
