DEAR HELOISE: My husband and I love to eat breakfast for dinner. I decided to experiment with something a little different for scrambled eggs. I chopped up scallions and mushrooms, and added about a tablespoon of half-and-half to the eggs, then beat the mixture. My scrambled eggs were creamy and very tasty with these additions.

DEAR HELOISE: I love coffee. I even like coffee-flavored ice cream better than other flavors. I had coffee at a friend's place, and it was delicious. She said she got the recipe from a pamphlet she had purchased from you. It was called "Spiced Coffee." Would you print that recipe for me?

DEAR READER: Mix together:

1 cup instant coffee

4 teaspoons dehydrated lemon peel

4 teaspoons ground cinnamon

1 teaspoon ground cloves

Store in a tightly covered container. For each serving, spoon a rounded teaspoon of the mixture into a coffee cup. Stir in 6 ounces of boiling water. You can also use this for iced coffee. For added flavor, sprinkle with nutmeg.

DEAR HELOISE: I was told never to wash my wooden rolling pin, but I find that sort of unclean. What do you think?

DEAR READER: I wash my rolling pin in hot, soapy water and rinse it off, then let it air-dry before putting it away. However, some people just shake it off and store it in a plastic bag. I like washing my rolling pins, whether they're marble, plastic or wooden.

DEAR READERS: Did you know:

• The cap of certain small bottles of vanilla measures 1 teaspoon, and with larger bottles of vanilla the cap measures 1 tablespoon.

• If you save yogurt cups, they usually measure exactly 8 ounces, and they are throwaways. So, no messy cups to wash.

• Got grapefruit spoons you never use? Try coring an apple or a tomato with them.

• Wooden spoons need to be seasoned before use. First, wash all your wooden spoons in hot, soapy water. Towel dry and let them sit overnight. Next, heat some cooking oil to medium hot and dip the spoons in the hot oil. Let them cool, then wipe the spoons dry. Seasoning keeps them from absorbing cooking odors.
