Pork tenderloin jazzed up with lemon spritz, onions

— Pork tenderloin is one of my go-to proteins. The lean meat lends itself to a variety of flavors and cooking methods - most of which take less than an hour from start to finish. The following dish was even faster. It combines thinly sliced pork tenderloin and caramelized red onions and comes together in about 30 minutes. Fresh lemon juice brightens the flavors of the otherwise hearty dish.

Sliced Pork Tenderloin With Red Onion and Lemon 3 tablespoons butter, divided

use 1 red onion, thinly sliced1 teaspoon minced garlic,

divided use 3 tablespoons sugar Juice of 1 lemon, divided use Salt 1 small pork tenderloin Ground black pepper

In a large skillet, melt 1 tablespoon of the butter. Add onions and cook about 15 minutes, stirring occasionally.

Stir in 1/2 teaspoon of the garlic, the sugar, 2 tablespoons of the lemon juice and 1/4 teaspoon salt. Reduce heat to low; simmer 5 minutes. Spoon mixture into small bowl; cover to keep warm.

Meanwhile, cut tenderloin into thin slices. Season with salt and pepper. Sprinkle with a little of the remaining lemon juice.

In the same skillet, melt the remaining butter over medium heat. Add the garlic and pork, increase heat to high and cook, turning the pork frequently, until just cooked through. Return onion mixture to the skillet and add the remaining lemon juice and cook just until heated through.

Makes about 4 servings.
