Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Critical violations: Employee washed hands in the three compartment sink. Raw whole shell eggs were stored above ready-to-eat foods, hot dogs were stored on top of lettuce and raw beef was stored above ready to eat foods in the walk-in. Food from breakfast catering was stored in the walk-in freezer, once food has been out to consumer it cannot be reserved. Dressings, cole slaw, open lettuces and other prepared foods were held past their discard times/dates. There was no variance of HACCP plan for reduced oxygen packaging of cooked meat. Cases of raw chicken were not being thawed in accordance to established procedures.

Noncritical violations: Cases of food were stored directly on the floor of the walk-in freezer. Wraps in the grab-and-go cooler were not labeled. Permit was not posted.

Critical violations: All employees must be trained in proper food handling procedures. Employee did not wash hands before putting on gloves; employee did not wash hands after handling raw meat. The handwashing sink was not accessible. Ham, salsa and pork fat were not date marked.

Noncritical violations: Fish was not being thawed in accordance to established procedures. Sinks do not have stoppers, repeat violation. The floor of the walk-in needs cleaning. A door sweep is needed on the back door. The posted permit is expired.
