Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Food from breakfast catering was stored in the walk-in freezer, once food has been out to consumer it cannot be reserved. Dressings, cole slaw, open lettuces and other prepared foods were held past their discard times/dates. There was no variance of HACCP plan for reduced oxygen packaging of cooked meat. Cases of raw chicken were not being thawed in accordance to established procedures.

Noncritical violations: Cases of food were stored directly on the floor of the walk-in freezer. Wraps in the grab-and-go cooler were not labeled. Permit was not posted.
