Some of the most impressive recipes have the fewest ingredients.

Take this spinach salad for example, it features just seven ingredients including salt and pepper: fresh baby spinach, bacon, red bell pepper, a poached egg, vinaigrette and the aforementioned salt and pepper. That's it. But the resulting dish is satisfying and luscious, if you don't overcook the egg (like we did for the accompanying photo). When perfectly poached, the silky liquid yolk rushes out with the pierce of a fork and enriches as it enrobes. But even an overcooked egg tastes great here. You could even make this with a hard-cooked egg, though the effect would be different.

Spinach, Bacon and Poached Egg Salad

2 to 4 slices bacon

2 eggs

2 ounces (about unpacked 4 cups) fresh baby spinach leaves

½ red bell pepper, thinly sliced

Salt and ground black pepper

¼ cup favorite vinaigrette

Fill a small saucepan about half full with water. Bring to a boil over medium heat.

Meanwhile, fry bacon in a skillet until crisp. Drain and crumble.

Crack each egg into a separate ramekin or small bowl. Gently pour eggs, separately, into the boiling water. When water returns to a boil, remove pan from heat. Cover and let eggs stand 3 to 4 minutes. Remove eggs from the poaching liquid with a slotted spoon and drain on a paper towel.

In a salad bowl, combine the spinach, crumbled bacon and red bell pepper. Divide among to salad plates or bowls. Top each with an egg. Season with salt and pepper and drizzle with vinaigrette.

Makes 2 servings.
