Jefferson County Food Safety for the week of 11-29-20

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• DOLLAR GENERAL STORE, 901 S. Blake St. Date of inspection Nov. 12. No paper towels provided at hand-washing sink in back restroom. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated air drying device at each hand-washing sink in food preparation, toilet and ware-washing areas. Milk (46 degrees F) and butter (48 degrees F) in reach in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

• DOLLAR GENERAL STORE, 901 S. Blake St. Date of follow-up inspection Nov. 20. Yogurt (50 degrees F) and milk (45 degrees F) in reach in cooler are out of safe temperature range. Time/Temperature Control for Safety (TCS) Foods shall be kept cold at a temperature of 41.0°F or below, as measured by an internal probe thermometer, to limit bacterial growth.

• BURGER QUEEN & CHICKEN LLC, 5535 Sulphur Springs Road. Date of follow-up inspection Nov. 19. All critical violations corrected during time of inspection.

• COMMUNITY SERVICE OFFICE-ST. PETERS, 1515 S. State St. Date of inspection Nov. 19.No test strips noted in establishment. Test strips must be available and used to test the strength of chemical sanitizing solutions.

• T'S PLACE, 3714 Camden Road. Date of follow-up inspection Nov. 19. All violations were corrected during time of inspection.

• OLIVE MART, 2202 S. Olive St. Date of inspection Nov. 17. Observed drinks and juice stored directly on floor. Food must be stored six inches above the floor to be in compliance with established regulations.

• FREEMAN'S ONE STOP, P.O. Box 43, Tucker. Date of inspection Nov. 18. Observation: No sanitizer test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Observation: Corrective Action: Preparation and storage areas in some disrepair. The PHYSICAL FACILITIES shall be maintained in good repair. Observation: USA Food Program shows, "business has expired license." Corrective Action: It is unlawful to operate a retail food establishment without a valid permit. Contact the billing office at 501- 661-2171 to ensure that you are in compliance with the law.

• PIZZA HUT, 7197 Sheridan Road, Suite 104, White Hall. Date of inspection into complaint Nov. 18. Floors throughout facility, especially under fryer area and shelving and by ware washing area, are unclean and need to be cleaned.

• PIZZA HUT, 7197 Sheridan Road, Suite 104, White Hall. Date of inspection Nov. 18. Three compartment sink is unclean and needs to be cleaned. Outside of fryer and prep area by fryer are unclean and need to be cleaned. Observed trash cans containing food residue being stored uncovered while not in continuous use. Trash cans containing food residue should be covered while not in continuous use. Ceiling vents above pizza warmers are visibly unclean and need to be cleaned. Walls behind fryers and dough prep area are unclean and need to be cleaned. Floors throughout facility, especially under fryer area and shelving and by ware washing area, are unclean and need to be cleaned.

• RICK'S QUICK STOP, 6000 W. Barraque St. Date of inspection Nov. 18. Observed cleaning brush and utensil being stored in hand washing sink. A hand washing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Items were removed from hand washing sink during inspection. Observed raw beef being stored on top of shredded cheese and mustard. Raw beef should be stored below ready to eat foods. Raw beef was placed at the bottom of the refrigerator during inspection. Observed chemical containers being stored on a shelf near bread and single service items. POISONOUS OR TOXIC MATERIALS shall be stored so they cannot contaminate FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES by Locating the POISONOUS OR TOXIC MATERIALS in an area that is not above FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE or SINGLE-USE ARTICLES. This paragraph does not apply to EQUIPMENT and UTENSIL cleaners and SANITIZERS that are stored in WAREWASHING areas for availability and convenience if the materials are stored to prevent contamination of FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES. Chemical containers were moved to under the three compartment sink during inspection.
