Jefferson County Food Safety for the week of 10-25-20

The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

The following are the results of food safety inspections conducted by the Jefferson County Health Unit:

• SAPACH LLC "SUBWAY," 1620 S. Main St. Date of follow-up inspection Oct. 20. No violations reported.

• LITTLE FIREHOUSE DAYCARE, 2911 W. 13th Ave. Date of follow-up inspection Oct. 20. All critical violation (#20 -- proper cold holding temperatures) corrected during time of inspection.

• LEGENDS, 1 Saracen Resort Drive 1. Date of inspection Oct. 14. Observed raw chicken being stored above raw pork in walk in cooler. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Raw chicken was moved to bottom shelf during inspection. Concentration of the quaternary ammonium is not reading correctly in the three compartment sink near the automatic dishwasher. A quaternary ammonium compound solution shall be used at a minimum temperature of 24°C (75°F), and be used as indicated by the manufacturer's use directions included in the labeling. The company was contacted to make the repairs to the quaternary ammonium in the three compartment sink. Observed seasoning being stored in bulk bins not labeled with common name of the food it contains. Food not in the original packages for use in establishment must be identified with the common name of the food.

• AWESOME LIL WONDERS, 620 S. Poplar St. Date of inspection Oct. 8. Don't block a hand washing sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use, and do not use for purposes other than handwashing. Items was removed from hand washing sink. Observation: Observed no paper towels at hand washing sink. Corrective Action: Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated-air drying device at each hand-washing sink in food preparation, toilet and warewashing areas. Paper towel was placed at handwashing sink during time of inspection.

• CHICKEN CITY, 7197 Sheridan Road, Suite 112, White Hall. Date of inspection into complaint Oct. 8. Hair restraints not observed when packing food. Food workers shall wear hair restraints, beard restraints, and clothing that covers body hair.

• WATSON CHAPEL HIGH SCHOOL, 4000 Camden Road. Date of inspection Oct. 5. Observation: Facility lacks test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions.

• WATSON CHAPEL FOOTBALL, 4000 Camden Road. Date of inspection Oct. 5. Observed paper cups stored directly on the floor. Single service items must be stored six inches above the floor to be in accordance to regulations.
