Critical violations: The handwash sink was out of paper towels. An open carton of liquid eggs was being stored over strawberry sauce. The prep table items were not marked with a time to indicate when they were removed from temp. A spray bottle of degreaser was being stored by hanging the trigger portion on the tubes of the soda machine syrup.

Noncritical violations: Facility was able to produce quat sanitizer strips for the dish sink, but was unable to locate the chlorine test strips. There is a black buildup on the white shelf and inside of door of the ice machine.

Ice bath: prep cook pasta at 45 degrees.

Noncritical violations: Food manager certification is not available. Prep tables do not have a thermometer or it is located in place where is not easy to read. Food employee is wearing rings and wristwatch. Utensils between uses are stored in a bucket with water. Water temperature is 85 degrees.

Critical violations: A container of cole slaw was at 64 degrees in an ice bath on the counter. A portion of wrapped meat was thawing on the counter partially immersed in a pan of still water.

Noncritical violations: Facility did not have certified food manager certificate available. Two boxes of soda syrup were being stored on the floor of the dry storage area. A box of clamshell to-go containers was being stored on the floor.

Critical violations: There is no soap available in the ladies room. There are no paper towels in the men's or ladies room. Meatballs in sauce leftover from the previous day were at 131 degrees and were being reheated by placing on the steam table. Sliced turkey on the right prep table was at 49 degrees, sliced cheese on the right prep table was at 45 degrees, Mozzarella pieces on the right prep table were at 47 degrees, chicken pieces on the right prep table were at 52 degrees, ranch in the undercounter reach-in was at 50 degrees, chipotle mayo in the undercounter reach-in was at 50 degrees. There are various deceased flying insects throughout the facility, and there is a moderate amount of live flying insects in the facility.

Hand washing sink does not have a sign to wash hands. Paper bag with panko bread crumbs is stored in contact with the floor and other containers with flour are open. Food employee does not have hair protection. Test strips are not available. Interior of prep table is dirty with water and food debris. Because food preparation area is hot, 100 degrees, they are using fans and surfaces are very dirty. Three sinks used to clean food contact surfaces is leaking. Retail food permit has expired 07/2021.

Serranos Mexican Grill & Cantina

1031 S. Krupa Drive, Fayetteville

Critical violations: There was an open canned beverage in an empty spot in the right prep table. There was no soap in the dispenser of the kitchen handwash sink. There were boxes of tamales in the walk-in freezer that were supplied by a person who makes them at home. Food prepared in a private home may not be used or offered for human consumption in a retail food establishment. There was a pan of raw beef over sour cream in the walk-in and a crate and a flat of raw eggs were over limes in the walk-in. The dish machine had a concentration of 0 ppm chlorine. Raw beef in the walk-in was at 47 degrees, sour cream in the walk- in was at 45 degrees, queso fresco in the walk-in was at 46 degrees, hot dogs in the walk-in were at 45 degrees, cooked pork in the walk-in was at 43 degrees and shredded cheese in the walk-in was at 45 degrees.
