Searcy youth named Miss White County Rice

— Meredith Williams of Searcy is the 2012 Miss White County Rice.

She was selected March 13 at a contest sponsored by the White County Farm Bureau and the White County Cooperative Extension Service. The contest is part of the Miss Arkansas Rice Contest, sponsored by the Arkansas Rice Council, the USA Rice Council, the Arkansas Farm Bureau Federation and the state Cooperative Extension Service.

The purpose of the Miss Arkansas Rice Contest is to promote interest in rice cookery and rice promotion among the youth in Arkansas and to focus attention of the general public of Arkansas on the importance of the rice industry to the economy of the state. The purpose of the awards in the contest is to recognize superior achievements in ricecookery, rice promotion and basic knowledge about the rice industry.

Meredith prepared her“Pineapple Rice Delight” recipe for the judges and gave a short presentation on the importance of ricein White County and on how to prepare her recipe. She will now be entered in the Miss Arkansas Rice contest.

The top 15 contestants will compete for the state title in August. Her prize-winning recipe is below.

PINEAPPLE RICE DELIGHT By Meredith Williams Ingredients: 20-ounce can crushed pineapple1/2 cup sugar 1 small box strawberry gelatin (or flavor of choice) 3 cups c ooke d ric e (lightly packed) 16 -ounce c ar ton small- curd cottage cheese 16-ounce container nondairy whipped topping Directions:

Heat pineapple and stir in sugar and gelatin. Stir until dissolved. Spoon in cooked rice and mix thoroughly. Cool and stir in cottage cheese with whipped topping. If desired, add 1/2 to 1 cup chopped nuts. Chill until served.

Serve by putting mounds onto lettuce leaves as a salad or into sherbet glasses as a dessert.

To make a healthier version, use sugar-free gelatin, light cottage cheese and light whipped topping.

Using brown rice increases the fiber.
