KFC biscuit query nets 1 recipe plus 2

Recipes that appear in Idea Alley have not been tested by the Arkansas Democrat-Gazette.

Lynn Howard shares this biscuit recipe in response to Marie O'Donohue's request for biscuits such as those from KFC.

The recipe is from Top Secret Recipes by Todd Wilbur (1993).

KFC Biscuits

5 cups baking mix such as Bisquick

1 teaspoon salt

2 1/2 tablespoons sugar

1/2 cup butter

1 egg, beaten

3/4 cup buttermilk

1/4 cup club soda

Flour, for dusting

Heat oven to 350 degrees.

In a large bowl, combine the baking mix, salt and sugar. Cut in butter.

In a separate bowl, combine the egg, buttermilk and club soda. Pour into dry mixture; stir until smooth.

Knead about 30 seconds. On a lightly floured surface, pat dough flat to 3/4-inch thick. Cut into circles using a biscuit cutter.

Bake 12 minutes or until golden.

The following recipes are from Top Secret Insider's Recipes Master Edition.

Hardee's Buttermilk Biscuits

4 cups self-rising flour

1 tablespoon granulated sugar

1 tablespoon baking powder

2 cups buttermilk, plus more for brushing

2/3 cup shortening

Combine all ingredients and mix well. Do not knead. Roll out to 1 inch thick. Cut and brush tops with additional buttermilk. Place on greased cookie sheet.

Bake at 400 degrees for 15 minutes or until golden brown.

Popeye's Biscuits

4 cups baking mix such as Bisquick

4 ounces sour cream

1 cup club soda at room temperature

Flour, for dusting

1/2 cup butter or margarine

Heat oven to 375 degrees.

Mix Bisquick, sour cream and club soda together. Pour onto floured surface and knead very lightly.

Roll out to about 1/2-inch thickness and cut with a biscuit cutter. Melt butter and pour half into a glass casserole dish. Place biscuits in dish and pour remaining butter over top of biscuits.

If you would like to use less butter, do not put butter in bottom of the pan; just pour a little over the top.

Bake at 375 degrees for about 20 to 25 minutes or until golden brown.
