Slaw, salsa pep up yesterday's turkey

Here's a quick lunch with leftover turkey. Deli coleslaw with added tomato salsa makes a crunchy topping for a roast turkey sandwich.

To round out the meal, serve the sandwiches with a green salad or bowl of soup.

Crunchy Coleslaw and Turkey Sandwich

1/2 cup prepared or deli coleslaw

2 tablespoons prepared tomato salsa

Salt and ground black pepper

1/2 pound sliced, roasted turkey breast

4 slices whole wheat bread

Drain coleslaw in a colander. Toss drained coleslaw with tomato salsa and add salt and pepper to taste. Divide sliced turkey in half and place on 2 slices of bread. Spoon half the coleslaw on top of the turkey and cover with remaining bread slices. Serve extra coleslaw on the side.

Makes 2 servings.

Nutrition information: Each serving contains approximately 351 calories, 40 g protein, 7 g fat, 33 g carbohydrate (8 g sugar), 94 mg cholesterol, 466 mg sodium and 5 g fiber.
