Critical violations: Wash hands any time contamination could have occurred, when changing tasks, cook did not wash hands in between glove changes. Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperature in accordance with rules and regulations; steel box with no temperature control used to store and cool meat for preparation.

Noncritical violations: Leak in bottom of hand sink in expo area. Light and shield missing from walk in cooler in kitchen.
